Are you ready for this? Things are getting a little weird.
I had originally planned to make a juice version of a beet smoothie I made over the summer but when I went to pick up beets there were none to be found.
I did find these pretty golden beets though and decided to go with it.
I’ve never had golden beets before so I thought I’d give them a try. It turns out they have a more subtle flavor than their bright red counterpart. Bonus: I didn’t need to worry about staining the new counters.
So I got it in my head that I’d add a little orange and make something for breakfast
Beets Before Breakfast Morning Juice:
1 navel orange
1 meyer lemon (I think a regular lemon will do)
1 golden beet
1 thumb-sized piece of turmeric
3 carrots
The store was out of ginger and I only had a little bit left that I wanted to use for something else, but a small piece of ginger would compliment it really well too.
The citrus gives this juice a nice bright flavor to balance out the earthiness of the root veggies. For even more sweetness add and extra orange.
I plugged it into Juice Recipes and it comes out to about 116 calories with over 100% of vitamin A and C and nearly 4 grams of protein. Not too sure how accurate the calculations are since they didn’t have golden beets or meyer lemons in their system, but I’ll take it.
